Aponte Honey is a beautiful example of why we keep coming back to Colombian coffees.

Produced by smallholders in Aponte, Nariño, this coffee comes from an indigenous reserve where honey processing has become something of a local signature. The producers behind this microlot have been working with honey processes since 2017, making them some of the early pioneers of this style in Colombia.

The conditions in Aponte are ideal for this kind of processing: high altitude, low humidity, and slow, stable drying. The result is a cup that feels both sweet and composed - expressive, but not loud. Layered, but still very clean.

In the cup, we find caramelized grapes, yellow plum, soft panela sweetness, and a gentle cardamom-like spice. It has the kind of profile we love at Melo: delicate, transparent, and quietly complex.

We roasted it light to preserve its structure, clarity, and natural sweetness.
